Instructions
Pre-heat your oven to 350 degrees (170c in electric oven) and line a 9-inch loaf tin with baking paper.
In a mixing bowl, whisk the flour, protein, sugar, cinnamon, baking soda and salt.
In a separate bowl, whisk the eggs, oil, vanilla and add in the banana.
Whisk until combined, small lumps of banana are ok.
Pour the dry ingredients into the wet and whisk until combined, then pour into the prepared pan and bake for about 55 minutes to an hour.
Your cake should be dark brown and when a toothpick is inserted into the centre it comes out clean.
Let cool in the pan completely then serve.

Ingredients
- 2 large bananas
- 2 1/4 cups almond flour
- 2 scoops Ultra Nutrition donut protein
- 1/4 cup coconut sugar
- 1 Tbsp cinnamon
- 1 1/2 tsp baking soda
- 1/2 tsp Salt
- 3 Tbsp coconut oil (melted)
- 2 Eggs
- 1 1/2 tsp vanilla essence
Optional:
Add some chocolate chips – swirl into your mixture for some added sweetness.
Add some nuts – if you want an added crunch, add to your mixture or top after baking either almonds or walnuts work great.
