Buffalo Chickpea Tacos

These Vegan Chickpea Tacos are the easy delicious weeknight meal you’ve been waiting for!

INGREDIENTS

  • 1 15oz Can Chickpeas, drained and rinsed
  • 1 TBSP Tamari
  • 1 TSP Garlic Powder
  • ½ TSP Cumin
  • ½ TSP Smoked Paprika
  • ½ TSP Onion Powder
  • 1 – 2 TBSP Hot sauce, or to taste
  • 6 Tortillas, warmed
  • ½ Avocado, sliced
  • ¼ Cabbage, shredded
  • 2 Spring Onions, sliced
  • ¼ Cup Cilantro
  • Vegan Sour Cream, optional
  • Lime Wedges, to serve

 

DIRECTIONS

In a small pan over a medium heat combine chickpeas, garlic and onion powder, cumin, paprika, tamari and hot sauce and cook until warmed through.

Warm the tortillas and layer each tortilla with the buffalo chickpeas avocado, cabbage, avocado, spring onions, cilantro.
