Breakfast Muffins

No need for a McMuffin when you can make a healthy version instead! Nutritious grab and go option for your busy mornings

Serves 2 | 3 Muffins per serving



  • 6 medium eggs
  • 2 Bacon Medallions
  • ½ Onion, chopped
  • ½ Red Bell Pepper, chopped
  • 50g Feta Cheese, chopped
  • Salt & Pepper to season




Preheat oven to 200˚C (400°F).

Crack the eggs into a mixing bowl add pepper to taste and whisk.

Grill bacon until cooked and cut into pieces.

Finely chop onion and pepper and evenly distribute into a muffin tin and pour over the egg mixture evenly.

Sprinkle the feta cheese over the egg mixture and cook for 22-25minutes.

Once cooked plate up or add to a Tupperware container.
