Serves 2 | 3 Muffins per serving
INGREDIENTS
- 6 medium eggs
- 2 Bacon Medallions
- ½ Onion, chopped
- ½ Red Bell Pepper, chopped
- 50g Feta Cheese, chopped
- Salt & Pepper to season
DIRECTIONS
Preheat oven to 200˚C (400°F).
Crack the eggs into a mixing bowl add pepper to taste and whisk.
Grill bacon until cooked and cut into pieces.
Finely chop onion and pepper and evenly distribute into a muffin tin and pour over the egg mixture evenly.
Sprinkle the feta cheese over the egg mixture and cook for 22-25minutes.
Once cooked plate up or add to a Tupperware container.
