Instructions
Preheat oven to 200C and line a large baking tray with baking paper and set aside.
To a large mixing bowl add the coconut flour, self-raising flour, protein powder, coconut sugar and baking powder and stir. Melt the coconut oil if it is solid then add to the bowl and stir.
Now use your fingers to break down the larger lumps of mixture until you have fine breadcrumbs.
Add a little of the milk at a time, and using your hands again combine all the mixture until you have a manageable consistency (a giant ball) It’s perfect when it forms together and holds well but isn’t sticky. If you add too much milk and get the stickiness, add a little more flour.
Now split your dough into ten portions and form rough balls, then flatten slightly, leaving them room to spread on the tray.
Crack an egg into a cup, whisk it up, and brush it on the tops and bake for about 20 minutes.
Serve with fresh fruit and cream (or butter), enjoy!
Optional
Try adding some dried fruit, chopped nuts or chocolate chips to the mixture before baking.
