Zucchini Noodles With garlic avocado sauce

Instructions

Cut off and discard the zucchini ends. Use a spiralizer or peeler to make zucchini noodles.

Heat the olive oil in a skillet over high heat, add the zucchini and beans and cook, stirring, for 1 minute. In a food processor, combine all the avocado sauce ingredients and pulse a few times to get to the texture you like.

Mix the sauce, zucchini and beans and serve.

Ingredients

  • 3 to 4 medium zucchinis
  • 1 tbsp olive oil
  • 1 (15-oz [425-g]) can white beans, drained and rinsed

Avocado Sauce

  • 1 ripe avocado, pitted and peeled
  • 1 tbsp olive oil
  • 30g chopped fresh parsley or 40g basil
  • Juice of ½ lemon or lime
  • 1 to 2 cloves garlic, minced
  • Salt and freshly ground black pepper

Serving Suggestions

  • Purple carrot slices
  • Fresh thyme
  • Hemp seeds
