Avocado and Egg on Toast

SERVES: 1

INGREDIENTS: 

  • 1x avocado
  • 2x eggs
  • 2x thin slices of bread (we used cheese bread)
  • 1x serving baby plum tomatoes
  • Pinch of garlic seasoning mix
  • Pinch of paprika
  • Pinch of black pepper

DIRECTIONS:

Step one- cut and mash the avocado

Step two- season avocado according to personal preference

Step three- chop tomato’s and add to avocado, mix.

Step four- put a pan of water on to boil, one at boiling point add salt and crack two eggs in

Step five- put toast in the toaster for 2-3 minutes, once the toast has popped the eggs are done!

Step six- spoon avocado mixture onto toast, add the eggs on top and serve with a healthy amount of freshly cracked black pepper- enjoy!
